Beef and capsicum wraps with tomato & avocado salsa

Ingredients
- Bazaar® Lebanese Breads (white or wholemeal) - 4
- Beef rump steak, trimmed - 600g
- Olive oil - 2 tsp
- Red capsicum, sliced thinly - 1
- Yellow capsicum, sliced thinly - 1
- Sour cream - 3 cups
- Finely chopped coriander, plus extra leaves to serve - 1 tablespoon
- Tomato & Avocado Salsa
- Cherry tomatoes, quartered - 125g
- Avocado, chopped finely - 1
- Small red onion, chopped finely - 1/2
- Olive oil - 2 tsp
- Lime juice - 2 tsp
Instructions
- Preheat a char-grill or barbecue on high.
- Place beef on a plate. Drizzle with oil and season with salt and pepper.
- Char-grill beef for 4-5 minutes, each side until cooked to your liking. Cover and rest for 5 minutes; slice thickly.
- Meanwhile, char-grill capsicum for 3-4 minutes until tender.
- Combine sour cream and coriander in a small bowl. Season to taste.
- Place cooked beef and capsicum along middle of Lebanese breads. Drizzle with sour cream mixture; roll up to enclose filling. Serve with avocado salsa and extra coriander leaves.
Tomato and avocado salsa Combine all ingredients in a small bowl. Season with salt and pepper.
