Italian Sausage Pizza

Ingredients
- olive oil - 1 tsp.
- Italian sausages - 2
- Bazaar® Gourmet Pizza Base - 1
- tomato paste - ¼ cup
- pizza blend grated cheese - 100g
- canned borlotti beans - 100g, rinsed, drained
- eggplant - 200g, grilled
- red onion - ½, sliced
- cherry tomatoes - 6, halved
- baby spinach leaves - 30g
- dried oregano - 1 tsp.
Instructions
- Preheat oven to 220°C/200°C fan-forced. Heat oil in a frying pan and cook sausages for 4-5 minutes or until cooked and golden. Slice.
- Place pizza base on lightly greased baking tray. Spread base evenly with tomato paste. Top with cheese, borlotti beans, eggplant, red onion, cherry tomatoes and baby spinach.
- Bake for 10-12 minutes or until cheese has melted and base is golden and crisp.
- Cut into wedges and serve sprinkled with dried oregano.
Note: To grill your own eggplant, Heat char-grill or bbq. Cut eggplant into slices and lightly spray with oil. Cook for 1 -2 minutes on each side or until golden.
