Sweet Potato & Beetroot Relish in Pita Pockets

Ingredients
- orange sweet potato - 800g, cut into 2cm pieces
- olive oil - 2 tbsp.
- Bazaar® Wholemeal Pita Pockets - 4
- can chickpeas - 400g, rinsed, drained
- snow pea sprouts - 80g, trimmed
- red chilli - 1, sliced
- feta - 80g, crumbled
- beetroot relish - ½ cup
Instructions

Preheat oven to 200°C/180°C fan-forced. Line a baking tray with baking paper. Toss sweet potato with oil and place on prepared tray. Bake for 30-40 minutes or until cooked and golden.

Warm pita pockets following packet instructions and cut in half. Fill with sweet potato, chickpeas, sprouts, chilli, feta and relish.
