Falafel pitas with tabouli & hummus

Instructions

  1. Heat falafels according to packet instructions, until heated through. Halve or flatten slightly.
  2. Cut pita breads in half and open to form pockets.
  3. Spread one side of the pockets with hummus.
  4. Place baby spinach and falafels inside the pockets. Top with tabouli and cucumber.
