Pide with Olive Tapenade, Caramelised Onions, Feta & Mint

Ingredients
- olive oil - ¼ cup
- brown onions - 2, thinly sliced
- Bazaar® Turkish Pide, halved horizontally - 1
- olive tapenade - 150g
- feta - 200g, crumbled
- fresh mint - ¼ cup, torn
Instructions
- Preheat oven to 200°C/180°C fan-forced. Heat oil in a large frying pan and add onions. Cook over low heat, stirring occasionally, for 15-20 minutes or until onion is very soft and caramelised.
- Meanwhile, place pide cut side up on a baking tray. Lightly spray with cooking oil and bake in oven for 15-20 minutes or until the bread is crisp.
- Cut into slices. Top with tapenade, caramelised onions, feta and mint and serve
