Sweet Potato & Beetroot Relish in Pita Pockets

30-40 minutes



  1. Preheat oven to 200°C/180°C fan-forced. Line a baking tray with baking paper. Toss sweet potato with oil and place on prepared tray. Bake for 30-40 minutes or until cooked and golden.

  2. Warm pita pockets following packet instructions and cut in half. Fill with sweet potato, chickpeas, sprouts, chilli, feta and relish.
