Tomato & Bacon Quiches

Ingredients
- Bazaar® White Lebanese Bread - 2
- olive oil - 1 tbsp.
- Don® short cut bacon - 125g, chopped
- cottage cheese or ricotta - ½ cup
- eggs - 4, lightly beaten
- cherry tomatoes - 3, halved
- fresh chives - 1 tbsp, chopped
Instructions

Preheat oven to 180°C. Cut 6 x 11cm circles from the breads and push into muffin tray holes. Heat oil in a frying pan and cook bacon until crisp and golden. Cool slightly.

In a large bowl combine eggs, cottage cheese and bacon. Season with salt and black pepper. Spoon mixture into the bread cups and top with a halved cherry tomato.

Bake in preheated oven for 15-20 minutes or until the filling is set. Serve sprinkled with chives.
