Tomato & Bacon Quiches

  1. Preheat oven to 180°C. Cut 6 x 11cm circles from the breads and push into muffin tray holes. Heat oil in a frying pan and cook bacon until crisp and golden. Cool slightly.

  2. In a large bowl combine eggs, cottage cheese and bacon. Season with salt and black pepper. Spoon mixture into the bread cups and top with a halved cherry tomato.

  3. Bake in preheated oven for 15-20 minutes or until the filling is set. Serve sprinkled with chives.
